Bean salad with feta and basil

Ingredients for 4 servings:

  • 800 g bush beans
  • 1 large onion(s)
  • Pepper from the mill
  • 3 tbsp Balsamic vinegar bianco
  • 4 tbsp rapeseed oil or sunflower oil
  • 200 g feta cheese
  • 1 bunch of basil
  • Salt

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Wash and trim the beans and cut into bite-sized pieces. Steam in a little salted water in a covered pot for about 15 minutes. If desired, add a few sprigs of savory. Drain, reserving 2 tablespoons of the cooking water. Rinse the beans in cold water and let cool in a sieve. Peel and finely chop the onion. Mix with the bean water, salt, pepper, vinegar, and oil. Pour the dressing over the cooled beans. Crumble the feta cheese and mix it with the roughly torn basil leaves into the salad. Let everything stand for about 1 hour.
