Cherry tomato salad

Ingredients for 1 servings:

  • 500 g cherry tomatoes
  • 200 g sheep’s cheese (feta cheese if desired)
  • 4 spring onions
  • 1 handful of fresh basil
  • 1 dash of olive oil
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic
  • Salt
  • pepper
  • 1 pinch(s) of sugar
  • 1 dashes lemon juice

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

with sheep’s cheese or feta

Wash the cherry tomatoes, halve them, and place them in a bowl. Crumble the feta cheese by hand (or chop it) and add it to the tomatoes. Slice the spring onions into rings and add them to the bowl along with the chopped basil. Mix a generous splash of oil, balsamic vinegar, and garlic to make a marinade. Season with salt, pepper, sugar, and lemon juice, and mix evenly with all the ingredients in the bowl. Let it sit for a few hours to allow the flavors to develop. The amount of garlic can be increased or decreased as desired. This summery salad is a great side dish to grilled food or other dishes, but also works well as a main course.
