Swede stew with smoked pork

Ingredients for 8 servings:

  • 1 kg smoked pork, neck or salmon, nB
  • 2 tbsp oil
  • 2 large onions
  • 1 bunch of soup vegetables
  • 1 large turnip(s), approx. 1.5 kg
  • 1.2 kg potatoes
  • 2 ½ liters of water
  • Salt
  • Broth, instant
  • pepper

Instructions

Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 30 minutes

Cut the smoked pork into bite-sized cubes. Peel the onion and dice it into small cubes. Wash the leek, halve it lengthwise, and cut it into rings. Brown the meat, onions, and leek in a large pot over high heat with the oil, then deglaze with 1.5 liters of water and simmer. During this time, wash, trim, and finely chop the carrots. Peel the celery, also finely chop it, and add it to the pot with the carrots. Continue simmering. Peel the turnip and potatoes, cut them into 1-2 cm thick pieces, and add them to the soup. Pour in the remaining water and bring to a boil. Season with salt, pepper, and clear broth, and simmer for another 30 minutes. Before serving, finely chop the parsley and add it to the stew for a wonderfully fresh flavor!
