Roasted chili almonds

Ingredients for 1 servings:

  • 600 g almonds, peeled
  • 400 g sugar
  • 150 g water
  • 2 pinches of cinnamon
  • 2 packets of vanilla sugar
  • 1 tsp, heaped chili flakes
  • 1 tbsp butter

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

An addictive treat

Bring the sugar, vanilla sugar, cinnamon, chili flakes, and butter to a boil with the water in a large nonstick pan. Add the almonds and, stirring constantly, cook until the desired color and shine is achieved. Pour the almonds onto a sheet of baking paper and break them up, first with a spoon (careful, they’re hot!), then with your hands, while they cool. The almonds will first change from wet to sugary, and then to a shiny, caramelly consistency. I use a 32 cm pan, so this is the perfect amount.
