Ingredients for 7 servings:

  • 2 liters of water
  • 750 g small swede(s)
  • 550 g potatoes, fine, floury or mostly waxy
  • 250 g sweet potatoes
  • 100 ml soy milk (soy drink), milk or water
  • 1 tsp, heaped nutmeg
  • Salt
  • 2 slice(s) cheddar cheese, optional
  • possibly pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Low-calorie, vegan version, ideal side dish, also suitable as baby food

Bring about 2 liters of water with 1 tablespoon of salt to a boil in a large pot. Cut the peeled, unpeeled turnip into thumb-sized pieces and add to the boiling water. 15 minutes later, add the peeled and chopped potatoes and sweet potatoes. After another 20 minutes, drain the cooking water. Add the nutmeg, cheddar cheese, and 1 teaspoon of salt, then mash the entire contents of the pot thoroughly with a potato masher and mix. Season with pepper, if desired. Important: The addition of liquid primarily controls the consistency. Therefore, add the soy drink (or milk) a little at a time until the desired consistency is reached. A little of the cooking water can also be used instead of milk or soy drink. Tip: You can also add a carrot if you prefer. 1 serving = 200 g, 120 kcal per serving.
