Mediterranean mashed potatoes

Ingredients for 4 servings:

  • 500 g potatoes, floury
  • 3 onions
  • 5 tbsp olive oil
  • 250 ml vegetable stock
  • 1 parsley root(s)
  • basil
  • oregano
  • Salt
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the potatoes and parsley root and boil in salted water for about 20 minutes until soft. Drain and mash with broth and 4 tablespoons of olive oil. Season with salt, nutmeg, and herbs. Peel and finely chop the onions, and fry them in 1 tablespoon of olive oil until dark brown. Serve the mashed potatoes sprinkled with the onions. It goes well with Mediterranean fish and meat dishes. Lightly fried garlic can also be added.
