Eggplant rolls

Ingredients for 4 servings:

  • 2 eggplants, sliced
  • 1 red bell pepper(s), cut into strips
  • 1 cup cream cheese
  • 1 clove(s) garlic
  • salt and pepper
  • olive oil
  • Parsley, chopped

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

to prepare well

Salt the eggplant slices and let them sit for 10 minutes. Then rinse them with water, dry them, brush them with olive oil, and grill them on a baking sheet in the oven until the first side is browned. Then turn them over and cook for another 5 minutes in the turned-off oven. Meanwhile, fry the bell pepper strips in olive oil, season with half of the garlic and salt. Let the eggplant slices cool, then season the cream cheese with salt, pepper, garlic, and, if desired, parsley. Spread them on the slices, place the bell peppers on top, and roll them up. Let them sit for a while. Tastes great with grilled food.
