Vegan and simple radish leaf soup

Ingredients for 2 servings:

  • n. B. Radish leaves
  • ½ onion(s), red
  • 1 small garlic clove(s)
  • 1 large potato(s)
  • 300 ml water
  • 1 tsp, heaped vegetable stock powder
  • 1 pinch of chili flakes
  • 1 tsp oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Using leftover radish leaves

Peel the potatoes, onion, and garlic and chop into small pieces. Heat a little oil in a pan and sauté everything for about 5 minutes. Then deglaze with the water, add the vegetable stock powder, chili flakes, and radish leaves, and simmer until the vegetables are soft. Blend everything with a hand blender until creamy and season with salt and pepper. One serving contains approximately 75 kcal.
