Ingredients for 1 servings:
- 200 g oat flakes, wholemeal
- 100 g fine oat flakes
- 100 g spelt flour (wholemeal) or wheat flour
- 1 medium-sized apple, grated
- ½ banana(s), mashed
- 1 tsp baking powder
- 2 m.-sized eggs
- 150 g butter

Beat the butter and eggs until fluffy, then knead with the remaining ingredients. The dough should now be very tough and sticky. Form small balls with your fingers, place them on a baking sheet lined with baking paper, and flatten them into 0.5 cm thick cookies. All 80 cookies fit on two baking sheets. I bake both trays at the same time with fan-assisted baking at 180°C for about 30 minutes. For younger children with fewer teeth, bake for a shorter time so the cookies stay softer. However, they won’t keep as long and there’s a risk they’ll start to mold. It’s best to make half a batch to start with. Tip: For older children, you can replace the wholemeal spelt flour with ground nuts.
