Hobbit-style potato soup

Ingredients for 4 servings:

  • ½ onion(s)
  • 1 large carrot(s)
  • 75 g celery
  • 400 g potatoes
  • 100 g beans, green
  • 1 tbsp oil
  • 750 ml broth
  • 250 ml milk
  • 200 g smoked pork, smoked or cooked ham
  • salt and pepper
  • Parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

The quantities given for the vegetables are net quantities, meaning they are already cleaned and peeled. Dice the onion, carrot, celery, and potatoes. Cut the beans into pieces of your choice. Heat the oil in a pan and sauté the vegetables for about 2 minutes. Deglaze with the stock and milk, cover, and simmer for about 20 minutes – depending on the size of the cubes. In the meantime, wash the parsley, shake it dry, and finely chop it. Dice the smoked meat, smoked pork, or ham as well. Remove the soup from the heat and purée briefly so that there are still pieces left in the soup rather than all of the vegetables. Return the soup to the heat and use the residual heat to warm up the pieces of meat. Season to taste and serve with the parsley. Serve with a hearty slice of farmhouse bread!
