Ingredients for 2 servings:
- 1 large turkey schnitzel, cut into strips
- 1 red bell pepper(s), diced
- 1 onion(s), diced
- 1 garlic clove(s), finely diced
- 2 tbsp olive oil
- 3 eggs
- salt and pepper
- 2 tbsp chives, in rolls
- curry
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with turkey, peppers and egg
Add the oil to a wok and sear the turkey meat all over in the heated oil. Add the finely chopped onions and bell peppers and sauté while stirring. Season with salt, pepper, and curry powder. Stir well to prevent the onions from overcooking. Add the finely chopped garlic and sauté. Crack the eggs over the mixture, stirring until the eggs are cooked through, adding more salt if desired. Divide between two plates and sprinkle with chives. Enjoy.
