Superfood breakfast bread with avocado and egg

Ingredients for 2 servings:

  • 2 slices of wholemeal bread
  • 2 tsp hemp seeds
  • 2 tsp chia seeds
  • 2 eggs, soft-boiled
  • 2 small avocados, ripe
  • 50 g cooked green peas
  • 1 tbsp olive oil
  • 1 dashes lemon juice
  • e.g. salt and pepper
  • coriander leaves for garnishing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Toast the bread slices. Peel and pit the avocados. Place the avocado flesh, peas, and olive oil in a blender and puree. Or mash finely with a fork in a bowl. Season with salt, pepper, and lemon juice. Spread the avocado mixture generously on the bread slices. Place the soft-boiled egg on top, possibly cutting it open a little to spread the yolk evenly. Sprinkle the hemp and chia seeds on the bread. Serve garnished with cilantro.
