Baked goat cheese with honey sauce

Ingredients for 4 servings:

  • 2 tbsp pine nuts
  • 2 large apples
  • 4 slice(s) goat’s cheese roll, cut approx. 1 cm thick
  • some salad (e.g. rocket, lamb’s lettuce…)
  • 2 tbsp honey
  • 1 tbsp butter
  • ½ tbsp balsamic vinegar

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Preheat the oven to 225°C (top/bottom heat). Roast the pine nuts in a dry pan, stirring occasionally. Cut the apples into four large slices, approximately 1.5 cm thick. Remove the cores. Place the apple slices in a greased dish and place a slice of cheese on top of each. Bake for approximately 20 minutes, until the cheese is golden brown. Wash the lettuce and arrange the leaves on serving plates. Place the grated cheese on top of the lettuce. Sprinkle with the pine nuts. Add the honey, butter, and balsamic vinegar to the still-warm dish and mix. Pour the sauce over the cheese and serve.
