Chocolate crunchy muesli

Ingredients for 1 servings:

  • 110 g soy flakes
  • 80 g salad seed mix (pine, sunflower and pumpkin seeds)
  • 20 g puffed quinoa
  • 20 g flaxseed
  • 50 g almonds, ground
  • 200 g chopped nuts, e.g. walnuts, hazelnuts, peanuts, cashew nuts
  • 30 g cornflakes
  • 40 g oat flakes
  • 20 g protein powder (chocolate flavor)
  • 25 g cocoa powder
  • 4 egg whites
  • 2 tbsp honey
  • possibly sweetener

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Preheat the oven to 150°C (top/bottom heat). Weigh all the dry ingredients and mix well in a large bowl. Whisk together the egg whites, honey, and sweetener (if using) until smooth. Pour over the nuts and mix thoroughly. Divide everything between two baking sheets and place in the oven for about an hour. It’s best to stir every 15 minutes to prevent lumps from forming—unless you want larger crunchy pieces—and to prevent burning. Then let it cool and enjoy. If you like, you can add dried fruit or chocolate chips once the mixture has cooled.
