Potato and celery mash

Ingredients for 2 servings:

  • 350 g potatoes
  • 150 g celery
  • 1 clove(s) garlic
  • 1 small onion(s) or 3 shallots
  • 150 g vegetable stock
  • 2 tbsp parsley
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegan, dairy-free

Peel and chop the celery, potatoes, onion or shallots, and garlic. Simmer the vegetables in the vegetable broth for 12-20 minutes until tender. The cooking time depends on the heat and the size of the pieces. It can also be steamed in a pressure cooker in about 3-4 minutes. After cooking or releasing the steam from the pressure cooker, mash and season to taste. Stir in the parsley or sprinkle over the top. Serve as a side dish. For a main course, I recommend making more.
