Goose fat with apples, onions and marjoram

Ingredients for 40 servings:

  • 1,000 g fat (goose fat)
  • 180 g lard
  • 20 g marjoram, shredded
  • 3 m.-sized onion(s)
  • 3 large apples
  • 4 pinches of salt

Working time approx. 10 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 10 minutes

Grandma’s Lard – best recipe ever – easy to prepare

Heat the goose fat in a pot. Peel the apples and onions and dice them into small cubes. Add both ingredients to the pot, stirring with a wooden spoon as the lard will be very hot. Season with salt and marjoram. Stir frequently, especially towards the end of the cooking time. It takes quite a while for the onions and apples to brown. Using these quantities (these are approximate), preparation took 2 hours. Add the lard at the very end. It’s needed to bind the mixture, otherwise the lard won’t set. Prepare clay pots. Pour the lard into the pots – if possible, let them cool outside. I add a spoon and stir the pots 3-4 times so that the apples, onions, and marjoram are well mixed and don’t just sit at the bottom of the pot.
