Ingredients for 1 servings:
- 300 g wheat flour, type 1050
- 165 ml water, lukewarm, approx.
- 1 packet of dry yeast
- 1 tbsp olive oil
- 1 tsp, heaped sea salt
- ½ tsp raw cane sugar
- 1 pack of puff pastry, approx. 275 g
- 1 pack of baking soda, 30 g
- 1 ½ liters of water
- 2 tbsp sesame seeds, for sprinkling
- some flour, for the baking tray

8 delicious croissants made from yeast puff pastry
Make a smooth yeast dough from the first six ingredients and let it rise, covered, for 15 minutes. Roll out the puff pastry. Roll out the yeast dough to the size of the puff pastry. Place the puff pastry on top of the yeast dough and press down firmly. Fold the resulting double dough in half from top to bottom. Then fold the dough in half again from right to left. Then roll the dough out again to its original size. Fold the dough twice more as described above and roll it out again to its original size. Fold the dough twice a third time as described above and cover with a cloth. Let it rest for 10 minutes. Then roll out the dough into a round. The dough should have a diameter of approximately 50-55 cm. Cut the dough into 8 cake slices and roll up each cake slice starting from the wide side. Cover the resulting croissants and let them rise for 30 minutes. Meanwhile, preheat the oven to 210°C (top and bottom heat). Line a baking sheet with parchment paper and dust the parchment paper lightly with flour. For the baking soda, bring the water to a boil in a large pot and add the baking soda. Using a slotted spoon, lower the croissants into the baking soda and let them sit for 1 minute. Then, using a slotted spoon, lift the croissants out, drain well, and place them on the floured baking sheet. Sprinkle the croissants with sesame seeds and bake in a preheated oven at 210°C for 20-25 minutes. These pretzel croissants are just as delicious for breakfast as they are as a side dish to a salad. Tip: They can also be made vegan using butter-free puff pastry.
