Ingredients for 3 servings:

  • 750 g flour (wheat flour type 405 or 1050)
  • 40 g yeast, fresh
  • 5 g sugar
  • ½ liter milk, lukewarm
  • 250 g oat flakes, wholemeal
  • 20 g iodized salt
  • 60 g butter
  • 1 egg(s)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Oat breadsticks

Put the flour in a bowl and make a small well. Crumble the yeast. Add it to the well with the sugar and milk and mix with about 2/3 of the flour until a thick dough forms. Cover with the remaining flour and the oats. Sprinkle salt on the side of the bowl. Cover the dough with a cloth and let it rise in a warm place for 20-30 minutes. Add the butter and egg and mix everything well. Let it rise for another 20-30 minutes. On a floured work surface, divide the dough into three pieces, form them into balls and shape these into three long (sheet length) loaves. Place the loaves on a greased baking sheet, brush with milk and let it rise, covered, for another 15 minutes. Cut eight to ten 1cm deep slices into each loaf, brush with milk again, and bake on the middle shelf of the oven for about 20-25 minutes at 220C (fan oven 200C). Tip: The loaves will be nice and crispy if you place a heat-resistant container filled with water in the oven.
