Zucchini noodles with crab and vegetables

Ingredients for 3 servings:

  • 2 m.-large zucchini
  • 2 stalk(s) leeks
  • 2 small onions
  • 2 cloves garlic
  • 250 g mushrooms
  • 250 g cocktail tomatoes
  • 80 g ham
  • 100 g cream cheese
  • 300 ml vegetable stock
  • 200 g shrimp(s) (Arctic shrimp)
  • salt and pepper
  • Herbs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

low-carb

Spiralize the zucchini or finely slice it with a vegetable peeler and fry it in olive oil. Pour in the vegetable stock, simmer for 5 minutes, and then set aside. Sauté the onions and garlic in olive oil, add the mushrooms, leek, and ham, and fry briefly. Then add the tomatoes, shrimp, and zucchini and simmer for 5 minutes. Finally, add the cream cheese and let it melt. Season the vegetable mixture with herbs, salt, and pepper. This meal is enough for 3 normal eaters or 2 hearty eaters. It’s not only low-carb but also low-calorie. If you’re not on a low-carb diet and want to reduce the fat, you can use lean ham and light cream cheese.
