Cauliflower rice with cooked ham, mushrooms and tomatoes

Ingredients for 4 servings:

  • 1 m.-large cauliflower
  • 8 m.-large mushrooms
  • 1 m.-sized onion(s)
  • 200 g cooked ham
  • 8 m.-large cocktail tomatoes
  • 200 g mascarpone
  • some oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Clean and wash the cauliflower, cut it into florets, and chop it in a blender until it’s about the size of a grain of rice. If you don’t have a blender, leave the cauliflower whole and grate it coarsely. Chop the onion and ham and sauté them in a pan with a little oil over medium heat. Chop the mushrooms and tomatoes and add them to the pan. Finally, add the cauliflower rice and mascarpone and fry for a while longer.
