Ingredients for 2 servings:
- 2 eggs
- 1 shot of milk, 1.5% fat
- some Edam cheese, grated
- salt and pepper
- 1 onion(s)
- 1 garlic clove(s)
- ½ bell pepper(s)
- 1 tomato(s)
- e.g. arugula
- oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Finely chop the onion and press the garlic, then fry in a little oil. Finely chop the tomato, bell pepper, and arugula. Season the egg with salt and pepper, add a little milk, and whisk. Then mix in the cheese. Add the bell pepper and tomato to the onions and sauté briefly. Then pour the egg mixture over the mixture. Sprinkle with arugula. Cover and let everything set for about 10 minutes.
