Eggplant-Mozzarella-Burger

Ingredients for 2 servings:

  • 1 eggplant(s)
  • 125 g mozzarella, cut into thin slices
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 tomatoes, dried, chopped
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Antipasti

Slice the eggplant. Combine the lemon juice and oil in a bowl and season with salt and pepper. Brush the eggplant with the marinade. Grill for 2-3 minutes without turning, until golden brown on the underside. Turn half of the eggplant slices over and top with cheese and chopped tomatoes. Place the other half on top of the topping, light-side up, to serve as a lid. Grill for two minutes, then flip the burgers and grill for another 2 minutes. A delicious alternative to grilling without meat.
