Sour cream dumplings

Ingredients for 4 servings:

  • 1 kg potatoes
  • 250 g potato flour, maybe a little more
  • 200 g sour cream
  • 1 pinch of nutmeg
  • Salt
  • n. B. Croutons (breadcrumbs)
  • 1 tbsp butter

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes

Peel the potatoes, halve them, and boil them in lightly salted water. Press them through a potato ricer while still hot. Add the potato flour, sour cream, and nutmeg and mix everything into a dough until it no longer sticks. Add a little more potato flour if necessary. Form the potato dough into not-too-large dumplings. Place a few croutons in the center of each one and seal the dumplings. Place the dumplings in boiling water, bring to a boil, and let stand for 20 minutes. Serve as a side dish with roast meat.
