Grandma's potato dumplings

Ingredients for 8 servings:

  • 1 kg potatoes, cooked, peeled (floury) from the previous day
  • 2.4 kg potatoes, raw, peeled (floury)
  • 3 tsp salt
  • n. B. semolina

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely grate the cooked potatoes and set aside. It’s best to use a fine vegetable grater for this, as the potatoes will be too fine on a potato grater. Then finely grate the raw potatoes as well. Place the mixture in a potato bag and squeeze out all the water. The mixture should be completely dry. Now mix the potato mixture well with the salt. If the mixture is sticky, knead in a little semolina until the dough no longer sticks to your hands. Then form dumplings about 5 cm in size. Cook these in gently simmering salted water for about 20 minutes. It’s important that there aren’t too many dumplings in the pot during cooking and that the dumplings aren’t touching each other. A juicy roast pork goes really well with this!
