Rye grain salad

Ingredients for 6 servings:

  • 1 cup of grain (rye grains), approx. 200 g
  • 2 liters of water
  • 1 bell pepper(s), fresh, red, diced
  • 1 bell pepper(s), fresh, green, diced
  • 1 small can of corn
  • 1 onion(s), finely chopped
  • 3 cloves garlic, finely chopped
  • 3 tbsp vinegar
  • 3 tbsp oil (olive or safflower oil)
  • Herbs (Herbs of Provence)
  • 1 bunch parsley, fresh
  • salt and pepper
  • chili powder
  • 1 tbsp mustard, medium hot

Working time approx. 45 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 45 minutes

Very tasty wholegrain salad, patience is worth it!

The night before, cover the rye grains with water and let them soak (about 10 hours in 1 liter of water). Drain the water and cook them al dente in 1 liter of water for about an hour. Drain the rye grains. Prepare a salad dressing with vinegar, oil, onion, garlic, mustard, and the spices. Add the paprika to the salad dressing and let it steep for 1/2 hour. Then add the lukewarm rye grains and corn, let it steep for about 2 hours, stirring occasionally, and serve. Serve with dark rye bread and a rich red wine.
