Ingredients for 4 servings:

  • 100 g brown rice
  • 100 g lamb’s lettuce
  • 400 g pineapple, fresh
  • 2 tsp oil (walnut oil)
  • Balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice until tender, drain, and let cool. Wash and trim the lamb’s lettuce. Dice the pineapple. Place the pineapple, lamb’s lettuce, and rice in a bowl. Add the walnut oil and mix gently. Season with balsamic vinegar, salt, and pepper. This serving serves 4 as a side dish; it serves 1-2 as a filling main course.
