Ingredients for 1 servings:

  • ½ cup quinoa, cooked
  • 1 avocado(s)
  • 1 banana(s)
  • 5 dates, dried
  • 1 handful of cashew nuts, roasted
  • 1 tbsp tiger nut flour
  • ½ lemon(s), juice
  • 5 tbsp olive oil
  • salt and pepper
  • some chili powder
  • 1 spring onion(s)
  • 1 tsp black sesame seeds
  • 1 tomato(s)

Dice the banana, avocado, and dates, mix with the quinoa, and fold in the roasted cashews. Mix with the lemon juice and olive oil and season with salt, chili powder, and pepper. If you like it sweet, stir in ground tiger nuts. Thinly slice the tomato and finely slice the spring onion. Garnish the salad with these. Finally, sprinkle with black sesame seeds. This serves one person as a main course or two to three as an appetizer.
