Basic recipe with many variations, from mild to spicy
Preheat the oven to 180°C fan/convection oven. Turn the cottage cheese out of the tub and mix it with the egg. Add herbs (I like to use Herbes de Provence), salt, and pepper, and mix to combine. Pour the mixture into a small casserole dish for one person and bake in the preheated oven for about 30 minutes. This basic recipe is a bit boring on its own, so here are a few variations. The additional ingredients are added before baking. – Add a few diced ham and peas (frozen) and top the casserole with a few tomato slices. – Dice or tear leftover cold cuts. Add a few sautéed mushrooms and a few diced onions and mix everything together. – Mix Mediterranean with a few olives and bell peppers and press small baby tomatoes into the casserole. Garnish with fresh basil. – Mix in any sautéed vegetables of your choice. – Mix in the tuna and olives. There are countless variations, and depending on the ingredients, this casserole is perfect for a low-carb evening meal. It’s warming and filling, and super quick to prepare. Depending on the ingredients, you might want to be careful with the added salt.
