Pak Choi with Garlic Sous Vide

Ingredients for 2 servings:

  • 2 m.-large pak choi
  • 4 garlic cloves
  • 1 tbsp, heaped hoisin sauce
  • e.g. soy sauce
  • 1 tbsp olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 25 minutes; Total time approx. 12 hours 35 minutes

Halve the bok choy lengthwise. Heat the olive oil in a pan and sear the cut surface of the bok choy. Crush the garlic cloves and mix with the hoisin sauce. Season with soy sauce to taste. Rub the sauce onto all cut surfaces. Place the bok choy in a sous-vide bag and vacuum seal. Ideally, let it sit in the refrigerator overnight. Preheat a water bath to 85 degrees Celsius. Cook the bok choy in the water for 20 minutes, then refresh in ice water or serve immediately.
