Acai Vanilla Protein Bar

Ingredients for 1 servings:

  • 100 g protein powder (vanilla, sweetened), e.g. whey
  • 250 g low-fat quark or skyr
  • 2 tbsp acai powder
  • 6 g fruit powder (strawberry, lemon, vanilla) – optional
  • ½ tsp salt
  • 100 g white chocolate

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

In a bowl, stir together the protein powder, quark, acai powder, salt, and optional flavor powder until smooth. Heat the mixture in a bowl twice in the microwave for 30 seconds, stirring again in between. Melt the chocolate and stir in. The batter will still be relatively runny. Line a small baking dish (approx. 30×30 cm) with baking paper and pour in the batter. Bake at 150°C (convection oven) for 15 minutes. The dough may be a little sticky on the inside, but the surface should be firm and dry. Let cool briefly. Cut from cold or warm. This is best done with a sharp pizza cutter, which should be cleaned after each cut. Let cool overnight. Then store in the refrigerator, ideally in a container, separating several stacked layers with baking paper. Makes 12 bars of 39g each, each with 100 kcal, 10.4g protein, 6g carbohydrates (including 5.3g sugar), and 4g fat. These protein bars have excellent nutritional value and taste incredibly creamy and fresh. They’re still very unassuming in appearance; feel free to share your ideas in the comments. Optional: If you’d prefer something less sweet, I have two ideas for you: 1. Replace 40g of the protein powder with unflavored and unsweetened protein powder. 2. Don’t add any flavor powder.
