Ingredients for 4 servings:
- 500 g tomato(s) (vine tomatoes)
- Salt
- 1 onion(s)
- 2 tbsp oil
- 1 tbsp vinegar
- ½ tsp sugar
- Pepper, freshly ground
- chives
- possibly marjoram
- possibly lovage
- possibly basil
- possibly water to taste
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
with variations
Wash the tomatoes, pat dry, and then cut into eighths or slices. Trim the green stems. Place in a bowl, season with salt, and let stand. Meanwhile, finely chop the onion and mix a marinade with oil, vinegar, sugar, pepper, and chives (and perhaps marjoram, lovage, basil, and a little water if desired). Pour over the tomato pieces and mix gently. Variations: Add thinly sliced gherkins or use parsley instead of chives.
