Ingredients for 4 servings:

  • 500 g tomato(s) (vine tomatoes)
  • Salt
  • 1 onion(s)
  • 2 tbsp oil
  • 1 tbsp vinegar
  • ½ tsp sugar
  • Pepper, freshly ground
  • chives
  • possibly marjoram
  • possibly lovage
  • possibly basil
  • possibly water to taste

with variations

Wash the tomatoes, pat dry, and then cut into eighths or slices. Trim the green stems. Place in a bowl, season with salt, and let stand. Meanwhile, finely chop the onion and mix a marinade with oil, vinegar, sugar, pepper, and chives (and perhaps marjoram, lovage, basil, and a little water if desired). Pour over the tomato pieces and mix gently. Variations: Add thinly sliced ​​gherkins or use parsley instead of chives.
