Raw cauliflower salad

Ingredients for 6 servings:

  • 1 head of cauliflower
  • 5 carrots
  • ½ bunch parsley
  • 3 garlic cloves
  • 1 lemon(s), juice
  • 100 ml olive oil
  • wine vinegar
  • Sea salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Add the garlic to the olive oil and blend until smooth. Chop the trimmed cauliflower and carrots in a food processor until the size of a grain of rice, or grate them finely. Finely chop the parsley and mix everything together. Add the garlic oil and lemon juice, and season with salt. Season with vinegar. It goes well with any type of meat at a barbecue, fish, potatoes, rice, or as a snack between meals.
