Chicory salad with apples

Ingredients for 4 servings:

  • ½ cup yogurt
  • ½ cup sour cream
  • 1 tsp honey
  • 1 tsp mustard
  • 2 tsp fresh herbs (dill, chives or parsley)
  • ½ tsp salt
  • 1 lemon(s), juice
  • 300 g chicory
  • 300 g apples (preferably rosy-cheeked)
  • 16 cashew nuts, walnuts or other, finely chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with sour cream and yogurt marinade

Combine the yogurt and sour cream and prepare a salad dressing with the honey, mustard, herbs, salt, and lemon juice. Cut the chicory into 0.5 cm wide strips and then wash them (blanch them to remove the bitterness, if desired). Wash the apples (preferably rosy-cheeked) and finely dice them with the peel. Mix both with the salad dressing. Ladle into serving bowls and sprinkle with the finely chopped nuts.
