Ingredients for 1 servings:
- 125 g brown sugar
- 125 g butter, soft
- 3 eggs
- 250 g flour
- 2 tsp baking powder
- 150 g pumpkin puree
- 120 ml buttermilk
- 2 tsp cinnamon powder
- 1 tsp ginger powder
- 1 tsp nutmeg
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
or simply pumpkin waffles with buttermilk
Whisk the pumpkin puree with the buttermilk until smooth. Beat the eggs with the sugar until fluffy. Add the butter. Stir in the remaining ingredients. Finally, add the pumpkin milk. The batter should form a smooth batter. Add a little more buttermilk if necessary. Pour the batter into a waffle iron in batches and bake until crispy brown. Cool on a wire rack.
