Ingredients for 1 servings:

  • 400 g flour
  • 20 g yeast
  • 250 ml water, lukewarm
  • 1 tsp salt
  • 3 tbsp oil
  • 800 g onion(s)
  • 400 g bacon, streaky and smoked
  • 250g Gouda
  • 200 g cream
  • 2 egg yolks
  • oil
  • Pepper, freshly ground

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 30 minutes

Dissolve the yeast in lukewarm water, then knead with flour, salt, and oil to form a dough. Cover and let rise. Meanwhile, slice the onions into rings and sauté in oil. Let cool slightly. Dice the bacon and grate the cheese. Whisk the cream with the two egg yolks. Roll out the dough and place it on a baking sheet. Arrange the onions on top. Season with pepper. Mix the bacon and cheese together in a bowl. Spread over the onions. Pour the cream over the dough. Let rise in the oven at 50°C with the door open for about 15-20 minutes. Remove the baking sheet and preheat the oven to 200°C. Bake the onion tart for about 30 minutes.
