Ingredients for 4 servings:

- 1 liter of milk
- Salt
- 2 tbsp sugar
- 125 g semolina
- ½ lemon(s), grated peel

Semolina flammerie
Separate the egg. Beat the egg whites until stiff peaks form. Whisk the egg yolks with 2 tablespoons of milk. Bring the milk to a boil with salt, sugar, and grated lemon zest. Remove the pan from the heat. Stir in the semolina while stirring and bring to a boil briefly. Stir the egg yolks into the slightly cooled semolina porridge. Gently fold the beaten egg whites into the hot porridge. Pour the semolina flammerie into a bowl and serve warm or cold.
