Baked salmon on a bed of tomatoes

Ingredients for 2 servings:

  • 250g mozzarella
  • 4 tomatoes
  • 500 g salmon fillet(s), frozen
  • 100 g herb cream cheese
  • 3 eggs
  • e.g. salt and pepper
  • n. B. Herbs of your choice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Low-carb

Thaw the salmon fillets. Slice the tomatoes and arrange them in a baking dish. Place the thawed salmon fillets on top. Season with herbs, salt, and pepper to taste. Cut the mozzarella into small cubes and spread it on top of the salmon. Whisk the eggs, season with salt and pepper, and stir in the cream cheese. Then pour the mixture over the salmon. Bake in a preheated oven at 200°C for about 20 minutes, until a crust forms.
