Cottage cheese and smoked salmon

Ingredients for 2 servings:

  • 2 cups cottage cheese, regular fat
  • 1 cucumber(s)
  • 100 g smoked salmon
  • ½ bunch of dill
  • ¼ onion(s), red, finely diced
  • Olive oil, e.g. Turkish
  • salt and pepper
  • 2 dashes lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Low carb, Paleo-friendly

Peel and quarter the cucumber. Remove the seeds and cut the cucumber into bite-sized pieces. Rinse the dill, shake it dry, and finely chop it. Reserve a few small stalks for decoration. Place the cottage cheese, cucumber, dill, and small onion in a bowl and mix well. Add a little olive oil for flavor and to make the cottage cheese a little smoother. Season everything with salt, pepper, and lemon juice and arrange it appetizingly. Arrange the smoked salmon on top and garnish with the dill sprigs. Note: In the photo I posted, I arranged everything in a Tupperware container because I like to eat the cottage cheese as a snack at work. It’s quick to prepare, tastes fresh, and is very filling.
