Fried peach with sesame on a bed of arugula

Ingredients for 2 servings:

  • 2 peaches
  • 1 buffalo mozzarella
  • 200 g cherry tomatoes
  • ½ bunch arugula
  • ½ lime(s)
  • 1 tbsp olive oil
  • 1 tbsp sesame seeds
  • 1 tbsp honey
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Wash, dry, and tear the arugula into small pieces. Drain the buffalo mozzarella slightly and cut into bite-sized pieces. Wash and quarter the cherry tomatoes. Arrange the three ingredients on a plate or in a bowl. Lightly toast the sesame seeds in a dry pan and set aside. Wash, dry, halve, and pit the peaches. Heat the olive oil in a pan and fry the peaches cut-side down over medium heat for 3-4 minutes. Squeeze the lime juice and add it to the peach pan along with the honey. Bring to a boil briefly, then remove from the heat. Arrange the peaches on the prepared plate or in the bowl and season with a little salt and pepper. Finally, drizzle with the pan juices and sprinkle the salad with the prepared sesame seeds. It tastes best when the peaches are still nice and hot. Per serving: approximately 370 kcal
