Rice casserole with apples

Ingredients for 4 servings:

  • 500 ml milk
  • 150 g rice pudding
  • ¼ tsp vanilla, ground
  • 2 tsp lime zest, grated (untreated)
  • 2 tbsp butter
  • 100 g prunes
  • 4 m.-sized apples
  • 1 lemon(s), juice
  • 3 tbsp honey
  • 2 tbsp sugar
  • 2 eggs
  • 1 pinch of salt

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the milk, rice pudding, vanilla, sugar, lime zest, and butter in a saucepan, bring to a boil, and simmer on low heat for about 15 minutes. Remove the pan from the heat and let the rice swell for another 10 minutes. Briefly pour hot water over the plums, then chop finely. Peel the apples, remove the cores, and thinly slice the flesh. Drizzle with lemon juice and mix with honey. Place the apples in a greased baking dish (or several small dishes) and arrange the plums on top. Separate the eggs and mix the yolks into the rice. Beat the egg whites with a pinch of salt until stiff peaks form and fold into the rice. Spread the rice over the fruit and bake the casserole in a preheated oven at 180°C for about 15 minutes.
