Fresh tomato sauce with garlic

Ingredients for 4 servings:

  • 1 kg tomatoes, ripe
  • 2 tbsp olive oil
  • 3 garlic cloves
  • 2 tbsp basil, marjoram and thyme, finely chopped
  • salt and pepper
  • chili powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut out the insides of the tomatoes, dice them, and heat them in a pan with the oil. Crush the garlic cloves and add them to the sauce, then simmer for a few minutes. Season with salt, pepper, and chili. Remove the sauce from the heat, puree, and pass through a fine sieve. Return to the heat, stir in the herbs, then ladle the hot sauce into prepared jars, seal them, and let stand upside down for a few minutes. Store in a cool, dark place. This way, you’ll always have a great sauce on hand when you’re in a hurry.
