Vegetable sauce with zucchini, peppers and tomatoes

Ingredients for 3 servings:

  • 3 zucchini (courgette, squash or cucumber squash)
  • 1 small can of tomatoes, peeled in tomato juice, 400 g
  • 1 red bell pepper(s)
  • 4 tbsp tomato paste, triple concentrated
  • salt and pepper
  • Balsamic vinegar
  • 6 tbsp olive oil
  • 4 medium-sized onions, red

For the vegetable sauce, finely diced onions are lightly browned in olive oil. Zucchini and bell pepper are diced and added to the onions, then lightly fried. The tomato paste is added and stirred until smooth with a little water, broth, or white wine. Now the canned tomatoes are chopped and added to the vegetable mix. Season with salt and pepper and simmer over moderate heat until the vegetables reach the desired consistency. Serve with a drizzle of balsamic vinegar, if desired. The quantities vary. This dish goes well with pasta, potatoes, potato dumplings, mashed potatoes, hash browns, etc.
