Low-carb rolls with potato fiber

Ingredients for 1 servings:

  • 250 g quark
  • 60 g potato fiber
  • 15 g psyllium husks
  • 25 ml water
  • 1 tsp salt
  • 1 tsp apple cider vinegar
  • 1 tsp cream of tartar baking powder
  • 3 m.-sized eggs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

makes about 4 rolls or one loaf of bread

Mix all ingredients in a bowl. Form into rolls by hand and place on a baking sheet lined with parchment paper. If you like, score the top of the roll. The dough will yield 4 rolls or 1 loaf. I sprinkled chia seeds on the rolls, but anything else will work, too. Bake in a preheated oven at 160°C (top/bottom heat) on the middle rack for about 1 hour. Approximately 180 kcal per serving based on 4 rolls.
