Classic banana pancakes

Ingredients for 4 servings:

  • 3 bananas
  • 1 m.-sized egg(s)
  • 80 g brown sugar
  • 200 g flour
  • 150 ml milk
  • 1 packet of vanilla sugar
  • ½ pack of baking powder
  • ½ tsp cinnamon
  • 1 pinch of nutmeg
  • 1 pinch of salt
  • Oil or clarified butter for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Simple and delicious

First, mash the bananas with a fork and season with nutmeg. In another bowl, whisk together the egg, sugar, vanilla sugar, cinnamon, and salt. Add the egg mixture to the bananas and mix. Add the flour and baking powder and mix with the milk. Depending on the ripeness of the bananas, the batter may be very runny. If you don’t like this, you can let it rest a bit. The flour will expand and make the batter thicker. Then fry the batter in batches as pancakes in a pan with a little oil.
