Ingredients for 2 servings:
- 2 onions
- 1 garlic clove(s)
- 1 tbsp oil
- 500 g bell pepper(s), colored
- 2 tbsp tomato paste
- 2 gherkins
- Broth, granulated
- salt and pepper
- e.g. paprika powder
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Finely dice the onions and garlic and cook in the oil until translucent. Dice the bell peppers, not too finely, and add them to the pan. Season with the granulated stock and tomato paste, then simmer with the lid on for about 20 minutes. Add the sliced gherkins and season with salt, pepper, and paprika. I like this dish with roasted chicken breast, but it can also be prepared for vegetarians, with potatoes or rice on the side.
