Ingredients for 5 servings:
- 200 g short grain rice
- 1 liter whole milk
- 90 g sugar
- 1 packet of vanilla sugar
- 3 eggs
- 2 tbsp butter
- some cinnamon
- possibly raisins
- some lemon peel
- some butter for the mold
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Cook the rice with the milk and 1 sachet of vanilla sugar for about 30 minutes, stirring constantly. Separate the eggs and beat the egg whites with 1 tablespoon of cold water until stiff peaks form. Whisk the egg yolks with the sugar, cinnamon, butter, lemon zest, and, if using, the raisins until smooth, then stir into the rice mixture. Carefully fold in the beaten egg whites. Grease a baking dish well, fill it, and bake at 180°C for about 40 minutes. When the rice casserole has a nice golden brown crust, it’s ready. Serve with a sprinkle of powdered sugar, apple and plum compote, or a fruit cocktail.
