Ingredients for 1 servings:
- 400 g apples, coarsely grated
- 150 g cane sugar
- 2 tbsp, leveled gingerbread spice
- 150 g walnuts, coarsely chopped
- 150 g cranberries, dried
- 150 g dried apricots (soft apricots), finely chopped
- 100 g raisins
- 60 ml rum
- 250 g flour
- 1 packet of baking powder

Combine the grated apples with the brown sugar, gingerbread spice, walnuts, cranberries, apricots, raisins, and rum in a bowl and mix well. Cover and let sit in the refrigerator overnight. The next day, combine the flour with the baking powder and fold into the apple mixture. Pour the batter into a greased loaf pan and bake in a preheated oven at 180°C (350°F) for about 1 hour.
