Tomato-mozzarella-herb baguette for BBQ

Ingredients for 4 servings:

  • 1 large baguette(s)
  • 70 g herb butter
  • 2 balls of mozzarella
  • 2 large tomatoes
  • 30 g Pesto Genovese

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat the oven to 180°C (top/bottom heat). Place the baguette on a baking sheet lined with baking paper. Score the surface of the baguette and spread the ridges with herb butter. Slice the mozzarella and tomatoes and carefully place a slice of mozzarella and a slice of tomato into each ridge. Place the filled baguette in the oven and bake for about 20 minutes until crispy. Once the cheese has melted, remove it and spread the Pesto Genovese over the surface. Perfect as a side dish for a barbecue.
