Ingredients for 1 servings:

  • 4 tomatoes
  • 2 eggs
  • 1 tbsp butter
  • 1 pinch(s) of paprika powder, hot
  • 1 pinch(s) sweet paprika powder
  • Salt and pepper, black
  • 1 tbsp tomato paste

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

a simple egg dish with tomato sauce

Wash the tomatoes thoroughly. Remove the stems and finely dice the tomatoes. Heat a small pan with butter and add the diced tomatoes, spices, and tomato paste, mixing well. Reduce heat to low, cover the pan, and simmer. Occasionally mash the tomatoes with a fork and mix well. Cook the sauce until thick. Make two holes in the sauce and break the eggs into them. Cook over low heat until the egg whites set and the yolks are still runny. Serve with plenty of bread for dipping.
