Vegetable towers with goat cheese and honey

Ingredients for 2 servings:

  • 1 zucchini
  • 1 eggplant(s)
  • Salt
  • olive oil
  • 2 tomatoes
  • 60 g cheese, goat cheese (goat roll)
  • 2 tsp olive oil
  • 2 tsp honey
  • 2 tbsp balsamic vinegar
  • 2 tbsp vegetable broth
  • ½ tsp rosemary, fresh
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 30 minutes

Slice the zucchini and eggplant and season with salt. Rinse and pat dry after about 15 minutes. Place them side by side on a baking sheet, brush lightly with olive oil, and grill in the oven until browned and soft. Alternatively, the vegetables can be pan-fried side by side, but this takes longer and produces a stronger aroma. Alternate slices of zucchini, eggplant, and tomatoes, as similar as possible, top with the cheese, and secure with a wooden skewer. Mix the olive oil with the remaining ingredients. Place the skewers in the baking dish, distribute the remaining vegetables, and drizzle with the dressing. Bake at 200°C for about 25 minutes. Goes very well with grilled steak.
